You will need:
(serves 2-3 adults or 2 adults & 2 children)
6 chicken thighs (skins removed)
2 red onions, peeled and cut into wedges (about 6 per onion)
1 small bag of new potatoes, cut into wedges, skins left on
2 tsp lazy garlic (or equivalent)
1 tbsp honey
the zest and juice of 1 lemon
2 tsp rosemary
2 tbsp olive oil
good grind of black pepper
Preparation
Turn slow cooker to lowest setting
Meanwhile get two bowls and in one add the potatoes, 1 tsp of garlic, 1 tsp of rosemary and the olive oil and mix well
In the other bowl add the honey, lemon juice, zest, remaining garlic and rosemary and the black pepper and mix well. Add the chicken thighs and cover well with the marinade (if you have the time, marinade the chicken an hour before you add it to the slow cooker to allow the flavours to enhance the chicken meat)
Place the potatoes on the bottom of your slow cooker and top with the chicken and all of the marinade
Then scatter the onions over the chicken.
Put the lid on and cook for about 6 hours until the chicken is cooked and tender.
Serve with salad or vegetables
